Our little ones were a big help this morning out in the garden! Our yellow zucchinis were ripe and ready to be picked. They hand delivered them to Michele just in time for her to make her Delicious Veggie Couscous! The kids loved it and it couldn’t be simpler – or more versatile!
Today’s Family’s Delicious Veggie Couscous
You will need:
Herbs and spices of your choice
For this particular couscous, Michele used our fresh garden zucchinis, red bell peppers, onions and peas along with some fresh garlic.
Boil your couscous in salted water according to package instructions.
Sautee your veggies in olive oil until tender. If you’re using garlic, add it at the very beginning for a mild flavour. Add it at the very end for a stronger flavour.
Mix your sautéed veggies into your couscous. Serve warm, or spoon into a container and keep for up to 4 days in the fridge. This dish makes great leftovers or a packed lunch!
That’s all! Really! You can use any vegetables you have on hand. Keep it fresh and local if you can. It’s colourful, tasty, and full of fibre and vitamins for growing kids. As another (even easier) option, add the veggies raw to make a salad.
