As you may have realized by now, we’re a big fan of chickpeas here in the Today’s Family kitchen. And why shouldn’t we be? Chickpeas are full of nutrients, vitamins, and minerals, and are an excellent source of plant-based proteins, making chickpeas a great addition to virtually every diet. There’s also a lot we can do with them in the kitchen.
Today, we’re experimenting with chickpea salad. Instead of roasting the chickpeas, the crunch in this recipe comes from fresh veggies – cucumbers are our favourites, but you could also use red or green peppers. Throw in some Roma tomatoes for some colour, and you have the makings of a delicious salad.

Most of the flavour comes from the dressing. Dressings can be intimidating for people to make on their own, but hopefully our video shows just how easy mixing your own salad dressing can be! And this dressing isn’t only great on chickpeas – drizzle some on leafy greens for a healthier, flavourful alternative to store-bought vinaigrettes.
