Today, we’re showing off another delicious, saucy chicken dish from the Today’s Family kitchen: chicken fajitas!
The base of this recipe is the fajita rice. Instead of plating these separately, we cook some tomatoes, onions, salsa, and tex mex seasoning along with the rice, which means that the rice absorbs all of those delicious flavours as it absorbs the cooking water. Yummy!
We then cook the chicken along with some more onions (to better unlock more flavour) and then assemble our fajitas on whole wheat tortillas with favourite vegetables. Check out the recipe below:
As always, these are great to experiment with! One of the best things about fajitas is that each one can be made to each person’s unique preference. Try serving with your child’s favourite vegetables. Yogurt is a great way to add another flavour to the fajita, and it even helps cool off the spiciness, too! Some children may be sensitive to spicy food, so yogurt is a great way to keep the meal enjoyable for everybody.
