Are you looking for a good, hearty side dish that will complement most of your entrée meals? Look no further than this yummy rice pilaf, straight out of the Today’s Family kitchen! This tasty recipe features carrots, bell peppers, celery, and green onions, making it a healthy side for any meal. Best yet – the recipe is super easy, requiring just one pot that spends most of the cook time simmering. This allows you to spend more attention on the main parts of your meal.
Pilaf is a classic dish that you can find all over the world – although people probably started making it in India. Our take on the recipe uses boiling water instead of stock to make sure that the dish is great for all of our children, including vegans and vegetarians. The long, 25 minute simmer makes most of the vegetables nice and soft to eat, and means that there is lots of time to have all of the recipes get to know each other in the pan.

You can try adding in some different vegetables, or replacing some of the boiling water with chicken stock for more flavour. Try tossing in a dash of your favourite spices, too! As with any classic dish, our rice pilaf is meant to be experimented with.
